Prawn & Avocado Salad
40g wild rocket
large handful fresh coriander
2 baby avocados (about 160g total)
½ lime
200g sungold cherry tomatoes
95g cooked prawns
1 tablespoon Tabasco Jelly
2 tablespoons Thai style Dressing
Mix together the dressing and jelly and marinate the prawns in the mixture for 20-30 minutes while you prepare the rest.
Peel and quarter the avocados and squeeze over the lime juice. Halve or quarter the tomatoes, according to size. Toss together the rocket & coriander and use to line a serving plate.
Arrange the prawns, avocado & tomatoes on the leaves. Pour over the dressing/marinade and serve
