Lunch Saturday 1 September - Lentil & Kale Soup
Lentil & Kale Soup
1 onion, chopped
3 cloves garlic, chopped
2 teaspoons olive oil
½ each green, red & yellow pepper, chopped
5 ribs celery, chopped
250g dry green or brown lentils
100g kale, chopped
1 litre vegetable stock
Saute the onion, garlic, peppers and celery in the oil until starting to soften . Add the lentils and vegetable stock and simmer until lentils are cooked, about 30-40 minutes. Add the chopped kale and cook for 5 minutes more. Season to taste with salt and pepper.
