Clean Out the Veggie Drawers Soup
1 onion, chopped (150g)
200g celery, chopped
200g pointed cabbage, chopped
1 pointed red pepper, chopped
185g carrots, chopped
1 fat vine tomato, chopped (about 150g)
1 can cannellini beans
½ litre vegetable stock
1 teaspoon thyme leaves
handful fresh parsley
Well, I am off on my travels again so time to clear out some veggies from the crisper drawers
It's soup - simple. Chop everything up, cover with stock, simmer until cooked. Puree or not, as you like (I did not). Add beans and parsley, heat through and EAT!
