Fried Rice with Pressed Tofu & Asparagus
50g dry weight brown basmati rice, cooked & cooled
100g asparagus, sliced and steamed until just tender
1 egg
2 squares pressed aromatic tofu
1 thumb ginger
2 garlic
2 tablespoons soy sauce
3 spring onions, sliced
Heat a non stick wok. Scramble the egg in it and set to one side.
Spritz with a little oil and add the ginger, garlic & tofu . Stir fry for a few moments, then add the cooked rice, asparagus and soy sauce.
Continue stir frying until everything is heated through. Add the spring onions and season to taste with salt & pepper.
