Grilled Prawns & Kumara Cakes with Thai style Herb Salsa
280g kumara
¼ red onion, minced (about 30g)
3 spring onions, trimmed & sliced
2 cloves garlic
Turkish red chilli flakes
Boil and mash the kumara. Add the onions, minced garlic and chilli flakes.
Spray a non-stick pan with a little flavourless oil and fry the cakes on either side until browned.
Thai style Herb Salsa
handful mint
handful coriander
2 cloves garlic
1 tablespoon fish sauce
2-3 green chillis, sliced
1 teaspoon sugar
50g cherry tomatoes, minced
In a pestle & mortar, pound together the mint, coriander, garlic & chillis. Add the sugar & fish sauce and mix well. Finally, stir in the chopped tomatoes
Serve with 100g grilled prawns and the kumara cakes.
