Lunch Wednesday 8 November - A Composed Salad


A Composed Salad
35g lamb's lettuce
35g rocket
1 duck egg, hard boiled
1 small avocado, peeled and pitted (about 65g), mashed up with some lemon juice
1 ripe tomatoes, sliced (about 200g)
1 serving of "Another Potato Salad"

Mix the leaves and use them to line a serving plate. Mound the potato salad in top and garnish with the egg, avocado & tomato.

I also had some pepperoncini pepper and a few caperberries!

Pepperoncini are spicy little pickled peppers! I love them, but they are salty, so not really very healthy. I got this jar in a funky little Turkish shop in Chapel Market (must stop buying food!)
