Dinner Monday 7 August - New Potato, Broad Bean & Green Bean Salad
New Potato, Broad Bean & Green Bean Salad
Dressing:
1 tablespoon hemp oil
juice and pulp of 1/2 lemon
2 cloves garlic, crushed
1 teaspoon sugar
1 teaspoon mustard
salt & pepper to taste
Mix all ingredients together. Add:
100g cooked new potatoes, cut into quarters or halves
80g cooked green beans, cut into 1" segments
95g cooked broad beans
50g sweet red pepper, cut into strips
40g spring onions, sliced
1 tablespoon fresh chives, chopped
small handful fresh basil, shredded
small handful fresh mint, shredded
small handful fresh flat leaf parsley
Arrange about 100g young leaf spinach on a serving plate and pile the prepared salad on top.
