Dinner Sunday 22 April - Colcannon Cakes


Colcannon Cakes
250g white potatoes
2 tablespoons cream
3 spring onions, finely sliced
60g cabbage, steamed and finely chopped

Boil the potatoes and mash with the cream. Season with salt & pepper, then fold in the cabbage & spring onions.

Form into two (or more) cakes. Fry in a non-stick skillet spritzed with oil for about 10 minutes on either side, until they are golden brown.

I had these with 80g each of peas and carrots.
