Lunch Monday 16 April - Sweet Potato with Arame


Sweet Potato with Arame
10g dried shredded arame, soaked in hot water and cut into bit sized pieces
1 medium sized sweet potato, peeled and cut into matchsticks (about 150g)
3 tablespoons mirin
3 tablespoons soy sauce
1 teaspoon unrefined sugar

Combine the mirin, soy & sugar with about 4 tablespoons of the arame soaking water.

Place the sweet potato & arame in a non stick skillet and pout over the sauce. Simmer over low heat until sweet potato is cooked, about 5-7 minutes. The sauce should be reduced to a syrup. Watch carefully, as mirin is prone to burning.

Sprinkle with gomasio and serve.

Gomasio is made by combining sesame seeds and salt. You can buy it ready made, but why bother - it is very simple to make. Just grind toasted sesame seeds together with salt in your preferred ratio. I like a mix of regular and black sesame, combined 3:1 with salt.

Had this with a massive herb salad.
