Lunch Tuesday 17 April - Grapefruit, Fennel & Prawn Salad


Grapefruit, Fennel & Prawn Salad
½ grapefruit, separated into segments
1 head fennel, shredded (about 225g)
110g prawns
handful coriander leaves


Combine grapefruit, fennel, coriander and prawns then pour over a dressing made of

juice 1 lime
1 tablespoon extra virgin olive oil
20g Manuka honey
seasoning

Combine gently but throughly. Allow to stand for 20-30 minutes, then serve on a bed of Romaine lettuce leaves.
