Lunch Saturday 14 April - Potato & Bean Salad


Potato & Bean Salad

1 can pinto beans, drained (235g)
300g boiled new potatoes (I used Anya)
160g runner beans
4-5 spring onions, slivered
1 Mamara type spicy green pepper, cut into strips

Combine all ingredients. Make a dressing of:


25g Manuka honey
1 tablespoon extra virgin olive oil
25g Dijon mustard
juice of 1 ½ limes
salt & pepper to taste


and combine with vegetable mixture. Allow to stand 20 -30 minute for flavours to develop before serving.


I had this on a bed of spinach & flat leaf parsley.
