Dinner Monday 11 September - Salad of Prawns, Udon Noodles and Vegetables
Salad of Prawns, Udon Noodles and Vegetables
200 grams bean sprouts, blanched in boiling hot water for 1 minute and refreshed
100g sugar snap peas, halved lengthwise and blanched in boiling hot water for 2 minutes and refreshed
2 small sweet orange pepper, cut into fine strips
100g cooked deveined prawns
80g udon noodles, cooked according to package instructions
Toss all ingredients together.
Make a dressing of:1
teaspoon sugar
2 tablespoons fish sauce
3 tablespoon oyster sauce
1-2 bird's ever chillies, chopped fine
juice 1/2 lime
Pour over the salad & mix gently but thoroughly. Allow to stand for 15-30 minutes before eating for the flavours to develop.
