Dinner Monday 28 August - Tofu, Bean & Pepper Salad
Well, it is getting sort of challenging now as
1) I have had no cooker since Wednesday and
2) I am just about out of fresh food as I am going away tomorrow
So, tonight's dinner is using up the last bit of fresh veggies and a tin of Marigold Braised Tofu. I was not able to cook the fine beans, so had to resort to slicing them French style and blanching them repeatedly in boiling water from the kettle. Not the best beans ever!
Tofu, Bean & Pepper Salad
1 can Marigold Braised Tofu
200g fine beans, preferably cooked!
2 small orange peppers, slivered
1 spring onions, sliced
2-3 cloves garlic, crushed
2 tablespoons soy sauce
4 tablespoons chilli bean sauce
Chop up the braised tofu. Add the vegetables, soy sauce & chilli beans sauce and mix well. Garnish with the spring onions and serve.
Could not be bothered to work out nutrition - off on holidays tomorrow!
