Dinner Sunday 27 August - Basil, Tomato and Mozarella Salad
Basil, Tomato and Mozarella Salad
2 fat vine ripe tomatoes (about 250g)
1 reduced fat mozarella (125g)
handful basil leaves (about 10g)
1 teaspoon extra virgin olive oil
salt & freshly ground black pepper
Slice the tomatoes and mozarrella into rounds. Interleave with basil leaves in an attractive pattern on a serving plate.
Drizzle over the oil and season with salt & plenty of freshly ground black pepper. I use the oil sprayer to get a nice even layer of olive oil without excess.
