Lunch Tuesday 12 September - Salad of Courgettes, Fine Beans, Roasted Pepper and New Potatoes
Salad of Courgettes, Fine Beans, Roasted Pepper and New Potatoes
100g romaine lettuce hearts, shredded
170g baby courgettes, grilled
165g fine beans, steamed
150g organic baby new potatoes, boiled and quartered
100g roasted red pepper, slivered
Line a plate with the lettuce. Combine courgettes, fine beans, potatoes and red pepper.
Make a dressing of:
1 tablespoon hemp oil
juice 1/2 lemon
1 clove garlic, crushed
1 teaspoon French's Classic Yellow Mustard
1 teaspoon sugar
salt & pepper to taste
Pour over salad vegetables and combine well. Pile on top of lettuce and garnish with:
100g Santini cherry tomatoes, quartered
