Dinner Monday 13 August - Wild Rice & Pressed Tofu Salad

Wild Rice & Pressed Tofu Salad
2 tablespoons soy sauce
1 chilli pepper (or to taste)
2 cloves garlic
55g ready prepared black bean sauce (I used Sharwood's)

3 spring onions
100g broccoli, steamed, in florets
½ pack aromatic pressed tofu (about 112g - I had Mong Shang Lee brand)
65g sugar snap peas
1 pointed, sweet red pepper (about 60g)
150g cooked wild rice

Make a dressing of the black bean sauce, garlic, chilli & soy sauce.

Combine the wild rice, pressed tofu (cut into slivers), sliced sugar snaps, sliced red pepper, steamed broccoli florets and spring onions.

Pour over the dressing and combine well.
