Lunch Thursday 2 August - Cheese Omelette & Padron Peppers


Cheese Omelette, Padron Peppers and Santini tomatoes
1 duck eggs
30g half fat red Leicester cheese

100g Padron Peppers
1 teaspoon Macadamia nut oil
sea salt
160g sliced red & Yellow Santini tomatoes

Picked up a pack of green Padron peppers in Waitrose and decided to try them out. They are tiny green peppers that come from Galicia in Spain. According to the pack, "one in 30 is spicy" but the website says one in fifty.

"The Spanish saying: "Pimiento de Padrón, pequeño pero matón", which translates roughly as "Padrón Pepper, a teeny-weeny thug""

I just sauteed them in a little macadamia oil and sprinkled them with sea salt, as suggested. They were tasty, but I did not seem to get any spicy ones.

:-(

Anyway, had them with a big serving of Santini tomatoes & an omelette made with 2 duck eggs and a little grated half fat Red Leicester cheese
