Lunch Friday 3 August - Fennel, Chicory, Grapefruit & Prawn Salad


Fennel, Chicory, Grapefruit & Prawn Salad
1 teaspoon olive oil
1 tablespoon honey
1 tablespoon mustard
juice 1 lemon
flesh from one grapefruit (remove the white pith)
1 head fennel, shredded (about 180g)
1 head chicory, shredded (about 170g)
110g prawns
handful parsley
100g shredded iceberg lettuce

Make a dressing of the honey, oil, mustard & lemon juice. Season with salt & pepper.

Add the shredded fennel and allow to stand for about 30 minutes. Then add the chicory, grapefruit, prawns and parsley and combine well.

Line a plate with shredded lettuce and mound the salad on top.
