Dinner Thursday 2 August - Udon with Prawns

Udon with Prawns
1 pack Korean seafood flavour udon style noodles
4 spring onions, sliced fine
110g prawns
100g sugar snap peas
50g baby corn
½ pointed red pepper (about 40g)
1 tablespoon Thai crispy fried shallots

Had some Korean udon from the Thai/Asian grocer that has opened in Chapel Market, so tried them out with some prawns, sugar snaps and baby corn.

Also picked up a pack of "Crispy Fried Spring Onions" - which I think are actually shallots. Anyway, they are delicious and remind me of Indonesia where crispy shallots always garnished the plates of mie goreng (usually Indo Mie in disguise!)
