Dinner Sunday 26 August - Fried Rice with Prawns, Peas & Peppers

Fried Rice with Prawns, Peas & Peppers
10ml oil
3 shallots, sliced thinly
3 cloves garlic
1 chilli
1 thumb garlic
2 baby yellow peppers, sliced
1 baby orange pepper, sliced
80g cooked prawns
200g fresh shelled peas
50g brown basmati rice, cooked and cooled.
1 teaspoon sugar
1 tablespoon fish sauce
3 tablespoon oyster sauce
handful coriander

Heat the oil in a wok and saute the shallots, garlic, chillies and ginger briefly. Add the peppers and continue stir-frying until they just begin to soften. Add the peas, prawns, cooked rice and stir fry for another minute or two until everything is heated through (the peas will not need much cooking time). Finally, sprinkle over the sugar, fish & oyster sauces and coriander. Toss well and serve.
