Lunch Saturday 18 August - Salad with Feta & Croutons


Getting ready to head off to Cornwall, so finishing off what it left in the fridge before I go.

Salad with Feta & Croutons
½ head iceberg lettuce
50g pea shoots
100g cherry tomatoes, slow roasted in the oven
50g feta cheese, cubed
80g white refrigerator bread, made into oven baked
croutons
1 teaspoon olive oil
1 teaspoon white balsamic vinegar

No recipe; just combine the lettuce & pea shoots. Dress with the oil & vinegar, then garnish with the tomatoes, feta and croutons. Season with salt & pepper and serve.
