Lunch Saturday 11 August - Cauliflower Cheese, Potato Wedges and Fine Beans

Cauliflower Cheese, Potato Wedges and Fine Beans
2 baby cauliflowers (about 200g)
100g fine beans
200g potatoes
Cheese Sauce

Just roasted the potatoes in wedges with a little spray oil and some of the Montreal steak seasoning and had them with the steamed cauliflower, fine beans and cheese sauce.

Cheese Sauce
10g cornflour
200ml vegetable stock
30ml extra thick single cream
65g half fat red Leicester cheese
1 teaspoon mustard
1 teaspoon Worcestershire Sauce

Mix together the vegetable stock and cornflour. Cook over low heat until thickened, then add the mustard, Worcestershire sauce and cream. Stir well then gradually stir in the cheese until melted & smooth .
