Lunch Sunday 26 August - Fusilli with Simple, Savoury Tomato Sauce


Fusilli with Simple, Savoury Tomato Sauce
15g Butter
3 cloves garlic
100g tomatoes, skinned & deseeded
10g capers
10g anchovies
handful fresh basil
100g wholewheat fusilli

Melt butter and saute garlic & tomatoes until softened. Break up the tomatoes with the back of a spoon until they are are smooth or coarse as you like, then add the anchovies and capers and allow to simmer for a few minutes, until the anchovies dissolve into the sauce.

Toss with the freshly cooked fusilli and the basil and serve.
