Lunch Monday 13 August - Greek Style Prawn & Feta Salad


Greek Style Prawn & Feta Salad
125g sliced iceberg lettuce
handful coriander leaves

150g 0% fat Greek yoghurt
1 clove garlic
handful fresh mint
1 teaspoon ground cumin
salt

110g cooked prawns
150g cucumber, thinly sliced
2 ribs celery, sliced (about 60g)
50g feta cheese, in small cubes
1 teaspoon chilli flakes

Combine yoghurt, garlic, mint & cumin. Season with salt & chilli flakes to taste.

Add the celery, cucumber and prawns and combine.

Arrange the lettuce & coriander on a serving plate. Mound the prawn salad on top. Garnish with feta cubes and more chilli flakes.
