Dinner Friday 13 October - Prawn, Edamame & Rice Noodle Salad
Prawn, Edamame & Rice Noodle Salad
80g raw edamame soy beans
2 stalks celery, sliced fine (about 80g)
90g king prawns, cooked
100g sugar snap peas, blanched in boiling hot water for 2 minutes and refreshed
50g rice noodles, cooked according to package instructions
4 spring onions, sliced (about 40 grams)
Dressing:
1 red birds eye chilli and 1 green bird's eye chilli, sliced fine
2 cloves garlic, minced
1 tablespoon Thai fish sauce
3 tablespoons Thai oyster sauce
juice 1/2 lime
Mix together all the dressing ingredients an toss with the noodles while they are warm.
Add the edamame, celery, sugar snaps, prawns and spring onions and toss well.
I used Chinese "rice slices" which are squares of noodle, sort of like the old Pennsylvania Dutch potpie noodles you get sometimes in the US. Only made from rice and from China...
