Lunch Monday 9 October - A Curly Stew
Curly Stew
300g curly kale
1 onion, chopped fine
2-3 cloves garlic
75g fusilli lunghi
50g mi-cuit oven roasted tomatoes
2 teaspoons Marigold Bouillon powder
Spray a non-stick pan with a litle oil and sautee the onions and garlic until transparent and soft. Add the kale and saute until wilted.
Meanwhile, bring a pot of water the the boil and cook the fusilli.
When the fusilli is cooked and the kale is also cooked, add the mi-cuit tomatoes, the bouillon powder and the fusilli to the kale. Reserve about one pint of the pasta cooking water and add that to the kale & fusilli as well.
Simmer for a few minutes and serve.
