Lunch Monday 2 October - A Japanese Style Noodle Soup
A Japanese Style Noodle Soup
1 pint dashi
2 tablespoons mirin
1 teaspoon golden unrefined sugar
1 bundle (50g) soba noodles, cooked according to package instructions
100g Japanese or Chinese fish cake, sliced thinly
300g pak choi (about 4 small heads), washed and quartered & steamed until tender
4 spring onions, washed, trimmed and sliced finely
1 teaspoon seven spice powder
Arrange cooked noodles & pak choi in serving bowl.
Add the sugar & mirin to the dashi and bring to a simmer. Add the fish cake slices and simmer for about 5 minutes.
Remove the fish cake slices and arrange in bowl with the noodles & pak choi. Ladle over the hot broth and garnish with 7 spice powder & spring onions.
