Dinner Sunday 1 October - Tea smoked Salmon with Udon Noodles

















Tea smoked Salmon with Udon Noodles
120g wild Alaskan Salmon fillet
1/2 bundle udon noodles (about 40g)
1 tablespoon soy sauce
1 tablespoon mirin
4 spring onions, shredded (about 40g)
100g tender stem broccoli

I wanted something nice to eat, with minimal effort as still feeling pretty lousy. So, I smoked the salmon and prepared the noodles very simple and had with some steamed broccoli.

The sauce for the noodles was just the soy & mirin, heated together until they form large bubbles are are starting to get syrupy. Toss in the cooked noodles and shredded spring onions.
