Lunch was a salad of
- 200g mixed leaves
- 2 fat tommies
- 90g prawns
- 4 quails eggs
- 1 cucumber, yoghurt & dill salad
Cucumber, Yoghurt & Dill Salad
1/2 large English cucumber (about 225g)
salt
150g 0% fat Greek Yoghurt
10g fresh dill, chopped
Slice the cucumber as finely as possible. Place a layer in a colander, sprinkle with salt, add another layer, sprinkle with salt and so on until all the cucumber is used.
Leave the cucumber to stand at least one hour, until wilted. Pick them up in handfuls and squeeze out as much moisture as you can.
Mix the yoghurt & dill, then add the cucumbers and mix well.
