Dinner Thursday 12 October - Enoki, Chinese Chives, Udon and Prawns in a Japanese style broth
Enoki, Chinese Chives, Udon and Prawns in a Japanese style broth
For the broth:
1 pint of dashi
3 tablespoons mirin
3 tablespoons soy sauce
1 teaspoon sugar
Simmer together for about 15 minutes over low heat.
1/2 bundle udon noodles (about 43g dry weight), cooked according to package instructions
90g prawns, cooked & deveined
100g enoki mushrooms, trimmed
50g Chinese flowering chives
1 teaspoon 7 spice pepper
Arrange the cooked udon & prawns in a serving dish. Simmer the enoki in the broth for about 60 seconds and add to the bowl. Then simmer the chives for about 60 seconds and add them to the bowl. Ladle over the hot broth and garnish with the 7 spice pepper.
