Breakfast Monday 12 February - Malthouse Loaf


Malthouse Loaf
8 fluid ounces warm water
2 teaspoons fructose or sugar
1 tablespoon dried yeast
1 large organic free range egg
40g dried skimmed milk powder
1 teaspoon salt
10 ml olive oil
450g malted flour

Combine the warm water, sugar and yeast and leave to bloom.

Add the milk powder, egg, oil, salt and half the flour. Mix well into a sponge. Leave to rise 1 hour.

Add the rest of the flour and mix and knead until smooth and elastic.

Leave to rise and knock back twice more.

Form into a loaf and place in an oiled 1 pound tin. leave to rise a final time and bake in a hot oven until bottom sounds hollow (about 25-30 minutes).

Makes one 750g loaf
