Dinner Tuesday 6 February - Crayfish, Avocado & Tomato Salad


Crayfish, Avocado & Tomato Salad
juice 1/2 lime
2-3 chilli peppers
2 cloves garlic
85g crayfish tails in brine
2 tomatoes, chopped (about 185g)
a small avocado, chopped (about 90g)
handful fresh coriander leaves
3-4 spring onions
120g bag mixed salad leaves

Combine the garlic & chillis with the lime juice. Toss together the tomatoes, avocados, coriander, spring onions and crayfish tails. Pour over the juice with the garlic & chillis and toss again to combine.

Line a plate with the leaves and mound the crayfish mixture on top.
