Lunch Saturday 10 February - Scrambled Duck Eggs with Truffle Butter and Asparagus


This is just two duck eggs, scrambled in a pat of truffle butter, served with 200g steamed asparagus and a tomato.

Eggs and truffles just love each other.

Truffle Butter
40g butter
35g black truffles, chopped fine
handful fresh parsley, finely chopped
squeeze of lemon juice
salt & pepper

Mash everything together and divide into 5 portions. Shape each portion into a coin and chill.
