Dinner Wednesday 7 February - Japanese Style Noodles with Crayfish, Pak Choi & Enoki


1 pint dashi
3 tablespoons mirin
3 tablespoons soy sauce
85g crayfish tails
2 heads (100g) pak choi
80g enoki mushrooms
3 spring onions, finely sliced
30g ho fan vermicelli noodles
1 tablespoon 7 Spice Pepper

Add the soy & mirin to the dashi and simmer for 10 minutes or so.

Meanwhile, cook the noodles according to manufacturer's instructions and steam the pak choi and enoki over the cooking noodles.

Drain the noodles and place in bowl. Arrange the steamed pak choi & enoki on top. Add the crayfish and ladle over the hot broth. Garnish with the spring onions and 7 spice pepper and serve.
