Barramundi Fillets with Herb Veloute
150g barramundi fillet
150 g potatoes
125 g broccoli
80c baby Chantenay carrots
1 portion Herb Veloute
I read about New Forest farmed Barramundi fillets in the Sainsbury's magazine. They are being farmed as an alternative to cod, so I thought I would give the a try. Their site says:

"New Forest Barramundi are reared in accordance with the most stringent environmentally friendly practices. They are reared in one of Europe's biggest indoor aqua farms based in Lymington, Hampshire. This revolutionary farm incorporates a new, patented recirculation system which recycles over 90% of the water used and also utilises a feed developed from sustainable sources. This is combined with the very latest Norwegian aquaculture technology.

The end result is a totally sustainable product with low food miles which sets new standards in the industry by minimising the impact on the local environment."
Was rather surprised to find they are sold as the whole fish, rather than fillets, as I imagine a lot of people would be put off my dealing with a whole fish.
Anyway, I filleted mine and just pan fried it with a little spray oil and a sprinkle of Mountain Pepper, as an homage to it's Aussie roots.
It was OK, but the texture is a bit coarse compared to cod.
