Lunch Wednesday 14 March - Herb Salad with Smoked Tuna & Duck's Egg


Herb Salad with Smoked Tuna
100g Romaine lettuce
50g wild rocket
50g spinach
large handful each of basil, dill, choves, parsley
4 spring onions, shredded

1/2 avocado, cut into chunks (about 60g)
juice 1/2 lime
1 fat vine tomato
1 duck egg, hard cooked
1 can John West smoked tuna slices

Make the herb salad by combining the lettuce, rocket, spinach & herbs. Toss well and spritz lightly with a little olive oil and white balsamic vinegar.

Toss the avocado chunks with the lime. Arrange the avocado, tomato, duck egg and tuna slices on the salad and serve.
