Dinner Thursday 1 March - Calamari with Herby Mayo


When the Waitrose in the Brunswick Centre opened, I did a whole bunch of shopping there, using up various alluring vouchers they had sent me. One of the items I bought was this Young's battered calamari, which has been lurking in the freezer ever since.

So I had some with sauteed oyster mushrooms, spinach and a herby/lemon mayonnaise.

No "recipes" involved, per se; just sauteed the oyster 'shrooms with some herb butter, garlic & sherry. The herb butter is something I like to make in batches and keep in the freezer - great for fish or veggies (like I eat anything else, really.)

The herby mayo is just mayonnaise from a jar mixed with lemon juice/rind, parsley & garlic.

Herb Butter
250g butter
20g fresh parsley, chopped fine
20g fresh basil, chopped fine
15g fresh tarragon, chopped fine
50g fresh chives, chopped fine

Soften the butter and cream. Add the chopped herbs and blend well. Form into a log and wrap in cling film, using the wrap to help shape the log. Chill until firm. Slice into ½ inch slices and store in a freezer proof box in the deep freeze.

Makes 25 servings/"pats"
