Lunch Monday 5 March - Herby Hummus Tortilla Wrap



Herby Hummus Tortilla Wrap
1 portion Herby Hummus
1 multigrain tortilla wraps
50 wild rocket
1 big fat tomato, sliced thinly

Spread each tortilla with some hummus and then add the rocket and tomato and roll up.


Ta-dah!

Herby Hummus
1 tin chick peas, drained (240g)
2 teaspoons sesame oil
1/2 echalion shallot (about 65g)
3 cloves garlic
juice 1/2 lemon
handful fresh coriander leaves
handful fresh parsley leaves
1 teaspoon ground cumin
raw green chillis to taste

Chuck the chick peas, shallot, garlic lemon juice and oil into a blender or food processor and whizz around to a fairly smooth paste.

Add the herbs and pulse the blender to chop the herbs into the hummus. Do not over blend or you will end up with green hummus (which is just unusual, that's all).
