Salad with Avocado, Quorn "Bacon" & Home made Tortilla Chips
1 head Romaine lettuce (about 200g)

2-3 spring onions
1 medium avocado (about 140g)
4 tablespoons low fat mayonnaise
small handful parsley
small handful coriander
juice ½ lemon
1 clove garlic

1 tomatoes, sliced (about 175g)
1 pack Quorn Deli style "Bacon" slices

1 wholemeal tortilla (about 45g)

This is basically a cheats guacamole on lettuce. I threw the Quorn strips in for some protein and the tortilla "chips" for some crunch and to use the last one up.

Cut the tortilla into wedges spritz with spay oil and give a shake of seasoned salt. Arrange on a tray and bake in a moderate hot oven until crisp and browned - they burn easily, so keep and eye on them.

Use a food processor or blender & whizz together the avocado, sliced spring onions, garlic, lemon juice, herbs and mayonnaise.

Shred the romaine and arrange on a plate. Mound the guacamole on top and garnish with the Quorn, sliced tomatoes and cooled tortilla chips.
