Dinner Sunday 2 September - Colcannon Cakes with Cheese


Colcannon Cakes with Cheese
170g Vivaldi potatoes, boiled & mashed
50g kale, steamed and chopped
2 spring onions, chopped

Combine to mashed potatoes, kale & spring onions. Form into two cakes.

Spray a non-stick skillet with a little olive oil and fry the cakes until brown on either side. Top with the cheese and pop under a grill until melted & golden.

Served with two grilled tomatoes and a few pepperoncini.
