Lunch Sunday 2 September - Greek Style Salad


Greek Style Salad
1½ teaspoons olive oil
juice ½ lemon
2-3 anchovies
30g black olives
50g cucumber, cubed
65g feta cheese, cubed
handful fresh parsley, chopped
handful fresh mint
½ dreid oregano
125g cherry tomatoes, halved
50g yellow pepper, cubed
50g radishes, sliced
100g Romaine lettuce, shredded

Mash the anchovies with the olive oil and lemon juice. Season with salt and lots of fresh black pepper.

Cobine the olives, cucumber, feta, herbs, cherry tomatoes, pepper and radishes. Toss with the dressing to coat. Line a plate with the shredded lettuce and mound the salad on top.
