Dinner Thursday 4 January - Smoked Trout, sweet potato "chips" & veggies
1 Sweet Potato (mine weighed 180g)
130g savoy cabbage
1 echalion shallot
100g fine beans
125g smoked trout with juniper berries
This is really simple. I just cut the sweet potato into chips, sprayed them with a few spritzes of olive oil, sprinkled them with some of my "Montreal Steak Seasoning" and baked them in a hot oven until crisp and golden, about 25 minutes. These are delicious.
I had them with one of the packs of smoked trout I bought in Welling, some steamed fine beans and 1/4 head of Savoy cabbbage which was stirfried with a sliced shallot.
