Lunch Friday 26 January - Smoked Trout with Cole Slaw
Smoked Trout with Cole Slaw & Salad
120g mixed leaves
125g smoked trout fillet
1 fat vine tomato
Coleslaw
1 tablespoon cider vinegar
1 teaspoon sugar
2 tablespoons light mayonnaise
1/2 teaspoon caraway seeds
2 spring onions, shredded
60g celery, sliced fine
60g carrots, grated
80g Savoy cabbage, shredded
Make a dressing my combining the vinegar, sugar, caraway and mayonnaise.
Mix together the cabbage spring onions, carrots and celery. Pour over the dressing and combine.
