Dinner Wednesday 3 January - Wild Mushroom Tortellini with mushroom sauce


I tried some new (to me, anyway) tomatoes that M&S had in today. They are called "strawmatoes" and are sort of strawberry shaped cherry tomatoes. They are very sweet and flavourful. Apparently, they were discovered in Japan and are now grown in the UK for M&S.

Anyway, for dinner I had the other half a pack of the disappointing Sainsbury Wild Mushroom tortellini, but I covered them in a mushroom sauce and had some fine beans and broccoli along with.


Mushroom Sauce
250g chestnut mushrooms, chopped
1 echalion shallot, chopped
2 cloves garlic, chopped
1/2 pint vegetable stock
1 tablespoon cornflour
2 tablespoons extra thick single cream

Cover the mushrooms, shallot and garlic with the vegetable stock. Cover and simmer over low heat until vegetables are soft and well cooked. Add a bit more water if stock evaporates down too much.
Mix the cornflour with a little cold water and add the the sauce. Cook over low heat until thickened, about 5 minutes. Stir in the cream and serve.
