Lunch Monday 15 January - Veggie Caldo Verde
Veggie Caldo Verde
1 small onion, chopped (about 90g)
1 teaspoon olive oil
2 cloves garlic
1 pint well seasoned vegetable stock
1 vegetarian sausage (about 50g)
1 potato (about 175g)
1 teaspoon paprika
150g curly kale
salt & pepper to taste
Saute the onion and garlic in the oil until cooked. Add the potatoes, kale, paprika and stock. Cover and cook until potatoes are tender, about 15 minutes. Add the sliced sausage and warm through.
