Lunch Sunday 7 January - A Spicy Composed Salad


A Spicy Composed Salad
1 small gem heart lettuces
1 carrot, shredded
4 Peppadew peppers
80g fine beans
3 hard cooked quail's eggs
35g caperberries
120g strawmatoes
85g crayfish tails
1 tablespoon spicy catsup
2 tablespoons low fat mayonnaise
squeeze of fresh lime

I just made a dressing for the crayfish tails from some Cool Chile Chipotle Ketchup and some low fat mayo with a squeeze of lime.

Mix together the lettuce and shredded carrot. Arrange other ingredients on top and serve.
