Dinner Friday 6 July - Asian Style Rice Salad with Chestnuts & Broad Beans


Asian Style Rice Salad with Chestnuts & Broad Beans
50g dry weight wild rice, cooked
80g broad beans
80g chestnuts, cooked & peeled
2 spring onions
25g leeks, sliced finely
2 ribs celery, cut into thin slices (about 60g)
½ red pepper, cut into strip (about 60g)
3 tablespoons hoi sin sauce (about 50g)
juice 1 lime
small handful fresh parsley

Toss the rice and vegetables together until well mixed. Add the hoi sin sauce, lime juice and parsley and mix gently, until the sauce is evenly distributed through the salad.
