Lunch Wednesday 4 July - Thai Style Mango & Prawn Salad

Thai Mango & Crayfish Salad
1 mango (330g)
1 fat vine ripe tomatoes (about 300g)
1 teaspoon sugar
2 tablespoons Thai fish sauce
juice 1 lime
2-3 green chillis, sliced
2-3 cloves garlic, crushed
4 spring onions, sliced
90g crayfish tails
handful coriander leaves

Haven't had this for a while, but got some mangoes in Chapel Market recently and had the crayfish, so decided to relieve the old Thai style mango salad.

Make a dressing of the sugar, fish sauce, lime juice, garlic & chillis. Add the mango and tomato (cut into bite sized chunks) and the crayfish (or prawns). Combine then add the spring onions & coriander leaves and combine again.

Serve on a bed of mixed leaves (I had pea shoots here)
