Lunch Tuesday 3 July - Grilled Halloumi Salad


Grilled Halloumi Salad
2 teaspoon olive oil
juice 1 lime
10g Manuka honey
2 teaspoons pomegranate molasses

120g halloumi cheese
150g asparagus
100g fine beans
100g Santini tomatoes
50g pea shoots
2 spring onions, sliced



Make a dressing of the oil, lime juice, honey & pomegranate molasses.

Slice the halloumi and grill until golden brown. Allow to cool and tear into bite sized pieces. Combine the cheese, fine beans, tomatoes and asparagus with the dressing and mix thoroughly.

Line a plate with the pea shoots & shredded spring onions and pile the cheese salad on top.
