Lunch Friday 29 June - Bean Salad

Bean Salad
20g Manuka honey
1 teaspoons oil
juice 1 lemon
100g cooked black beans
100g cooked fine beans
½ red pepper (abt 65g)
100g cherry tomatoes
1 rib celery, slice (abt 25g)
3 quails eggs, hard boiled

50g pea shoots

Make a dressing of the honey, oil & lemon. Add the black beans, fine beans, red pepper, cherry tomatoes and celery. Combine well.

Line a plate with the pea shoots and pile the bean salad on top.

Serve garnished with the quails eggs.
